You can install xfce, or any desktop you like, on any ubuntu image through the apt package manager. I think the command is:

sudo apt install xubuntu-desktop

For RTL8811CU, RTL8821CU, and RTL8731AU, the drivers are already upstream so these dongles should be plug and play with official images.
